Peppers Ready for Roasting

 

We have delicious peppers ready for roasting on the BBQ, smoker, or grill. Roasted peppers are super easy to freeze for a mid-winter meal. Simply roast, peel, cool, place in freezer storage bag, label and freeze.  We have Bell peppers, Jalapeno peppers, Anaheim peppers, Sweet Italian Roasters, and Delilah peppers.

 

Cook Now and Eat Later

 

Planning to use food harvested in the summer month in the winter months is an age-old practice. It is a healthy way to fill your freezer and very budget friendly. Freezing peppers is a very easy task. Wash. Chop. Freeze. If you would like more flavor variety or to add to the appetizers for New Year’s Eve, make some stuffed jalapeno peppers. Slicing the peppers in half from stem to blossom end opens the cavity with seeds. If you like spicy, leave the seeds. Otherwise remove the seeds and fill with a mixture of cream cheese, shredded cheddar cheese, and crumbled bacon. Place the peppers on a cookie sheet and freeze for one hour. Remove from freezer and wrap individually in plastic wrap and place into zip top freezer bags. Don’t forget to label the bags.

 

Roasting Peppers

 

Any pepper can be roasted on the BBQ or over a fire pit. Coals should be of medium heat. Place peppers on grill and watch closely. Turn using tongs. Listen for the pepper seeds popping! Pepper skins can become darkened and even charred. Once they are darkened, remove peppers from heat and place into a paper bag. Allow peppers to rest for ten minutes. They will be cool enough to handle. Peal skin from pepper. Place into quart size zip top freezer bags. Label and freeze.

 

Peppers, Onions, Sweet Corn

 

Preparing chopped peppers, chopped onions, and sweet corn cut off the cob makes an excellent fresh frozen add into your meals in the winter. Prepare all vegetables and combine in a bowl. Stir to distribute evenly. Pack vegetables into quart size freezer bags. Label. This vegetable medley is ready to add to chili, omelets, hashbrowns, soups, and breads. You will be so happy you took a summer afternoon to prepare these flavorful, fresh, and delicious vegetables for eating throughout the year.  Now, if you can’t wait to eat the roasted peppers, then you can stuff them with rice and cheese sauce and top it with your favorite garden-fresh salsa.
