Delicious Purple Broccoli 

 

Purple Broccoli also known as Unicorn Broccoli to the youngest visitors to the farm because the purpleness looks so magical! It is ripe and ready to eat! Purple broccoli is delicious raw or dipped in your favorite hummus or ranch dressing. It is delicious when steamed and seasoned with ‘everything but the bagel seasoning’.

 

Rich in Antioxidants

 

All parts of the broccoli plant are edible. The stem has the most fiber, the leaves have the most cell protecting antioxidants, and the florets are rich in calcium, vitamin C, vitamin A, and vitamin B. Broccoli is also a rich source of iron and folic acid. The best part of eating broccoli beside the great flavor is that is helps protect the body from heart disease, diabetes, and osteoporosis. Imagine all of the power of a broccoli spear to help heal the body!

 

Broccoli Soup

 

Start your pot by gathering the ingredients together:

1 pound of broccoli, chopped

1 medium onion, chopped

1 small apple, chopped

2 medium carrots, chopped

3 medium potatoes, peeled and chopped

3 cloves garlic

 

1 teaspoon sea salt

pepper to preferred taste

2 cups milk or plant milk

 

Using a medium sized stock pot, heat with 2 Tablespoons butter. Add onions, apple, carrot, and potatoes. Sautee until onion becomes translucent. Add broccoli, garlic and cover vegetables with water. Enough water to cover just the top of the vegetables in the pot. Add salt and bring to a low boil. Simmer for 15 minutes or until potatoes are tender.

 

If you like creamy soup, pour all soup stock pot into a blender and blend until cream. Return to pot and heat on low. Add milk, stir and serve. If you prefer chunky soup, add milk directly to pot, heat thru, and serve. A humble soup with a delightfully rich taste.
